While maple and birch are very close in consistency and processing, their similarities end there.
Their flavour profiles are quite different, so much so that they do not compete, but rather compliment each other. Maple is used as an addition to food which can tolerate extra sweetness such as pancakes, while birch is a culinary syrup. It is most useful to add dimension to dishes and cocktails, with the option to incorporate more sweetness if desired (perhaps some maple syrup!). At Hillside Farm, we are proud to offer both.
